8.2 Dried Beans

Sweet and Sour Beans

 

1 lb ground beef or pork

1 onion (optional)

1 tbsp oil

¾ lb kidney beans – or mixture of beans (soaked 3 hours, boiled 1 hour if using Nature’s Route Farm beans – longer if using commercial beans)

¼ cup molasses

½ cup vinegar

¼ cup brown sugar

1 tbsp prepared mustard

¼ cup tomato sauce or catsup

¼ tsp salt

½ package dry onion soup mix (optional)

 

Preheat oven to 350 degrees.

Brown ground meat and onions in oil.

Add all other ingredients and stir.

Pour into covered casserole.

Bake for 1 hour.   

Serves 6 – 8.

 

Variation:  Substitute the molasses with maple syrup.

 

 

Calgary Stampede Beans

 

3 slices bacon, sautéed (optional)

1/2 onion

2 cups cooked yellow eyed beans

1/2 c diced tomatoes

4 Tbsp brown sugar

2 Tbsp molasses

1 tsp Worchestershire sauce

1 tsp dried mustard

1 small can pineapple tidbits, drained.

 

Mix in crock pot.

 

Susan Summerby Murray addsd:

-she sometimes adds chunks of ham or omits the meat altogether

-adds more tomatoes

-add more Worchestershire sauce and mustard

 

Basically, add what you have on hand!
